Eggs with onions

You need only 3 ingredients to make the quick, easy and delicious recipe of the week. Eggs with onions is a peasant dish, very popular in Southern Italy, especially in Apulia (Puglia).

Ingredients for 4 servings

4 eggs
3 medium onions
3 ripe tomatoes
salt, pepper
6 tbs extra vergine olive oil
bay leaves

In a frying pan pour the oil and the thinly sliced onions, the chopped tomatoes, bay leaves, season with freshly ground black pepper and salt. Let sauté at medium-high heat for 5-10 min, stirring regularly. Then add an half glass of water, turn the heat low, cover the pan and let cook for 11-15 min  or until the onions are soft.

Take off the lid and gently open the eggs on the onions and tomatoes, be careful to keep some distance between the eggs. Cover with lid,  if you like well-cooked egg, let it cook for around 10 min, in other case 5 min.
